Pulp Muffins (GF)

We’ve been meaning to make some delicious snacks out of the juice pulp we got from our juice cleanse, and the great thing about having already frozen the pulp is that it stays good! Finally, we had enough time today to make some delectable pulp muffins. Yum! (Contrary to M’s belief, a little more goes into this recipe than just placing the pulp in muffin tins and popping them in the oven. Hehe!)

INGREDIENTS

  • 1 1/2 cup juicer pulp
  • 1/2 cup brown rice flour
  • 1/2 cup almond flour
  • 1/4 cup tapioca starch/flour
  • 1/4 cup coconut flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon kosher or sea salt
  • 1/4 cup cane sugar
  • 1/2 cup butter, melted
  • 2 tablespoons honey
  • 3 eggs
  • 1 1/2 teaspoons vanilla

INSTRUCTIONS

*Preheat oven to 350*F/176*C

1. In a small bowl, whisk eggs together. In a small sauce pot over medium heat, melt and combine butter, honey, and sugar.

2. Mix all dry ingredients together in a large bowl. Once combined, pour in eggs and sweet mixture. Stir stir stir. Divide mixture into lined or greased muffin tin.

3. Place in oven for 30 to 35 minutes, muffins are done when a toothpick inserted in the middle comes out clean. Remove from the muffin tin and allow to cool on a wire rack. Revel in your healthy and sweet creation! *Makes 12 regular sized muffins.
